When your family is split between Austin and Dallas, the stretch of I-35 between the two becomes a familiar drive. Recently, we decided to meet in Waco, a practical halfway point that turned into the perfect place for a relaxed family day. We didn’t plan anything elaborate—just a chance to share a meal and walk around together—but what unfolded was a day full of adventuring, conversation, and a genuine appreciation for how the heart of Waco has grown.

Our first stop was Southern Roots Brewing Co., a cozy local brewery nestled in the heart of downtown. The laid-back atmosphere and friendly staff made it a great meeting spot, and we were looking forward to catching up over craft brews and bar bites. But after reviewing the menu, we realized the food options were limited for what we had in mind for lunch.

Thankfully, one of the staff members kindly pointed us in the direction of Café Cappuccino, just a few blocks away. It was a great reminder that being open to a little flexibility can lead to something even better than what you originally planned.

Walking into Café Cappuccino, we were greeted by a bustling brunch crowd and the cozy charm of a well-loved local eatery. After lunch, we drove a short distance to the Magnolia Market at the Silos, a development spearheaded by Chip and Joanna Gaines that has completely transformed this once dilapidated corner of Waco into a vibrant destination. What used to be an old industrial grain silo complex is now a beautiful, mixed-use community space with shops, green areas, food trucks, and event venues—all seamlessly tied together by thoughtful design and hospitality.

We started by taking a family photo at one of the popular Instagram backdrops—cheesy, maybe, but needed proof we were there. It’s not every day we’re all in the same place at the same time, and the photo captured a rare moment of togetherness. As we wandered the grounds, we passed the main lawn and a small outdoor stage where a country cover band was performing live. The music added a festive energy to the atmosphere and set the tone for the afternoon of exploring.


Gardens, Food Trucks, and Historic Touchpoints

One of my favorite spots in the Silos district was the herb garden, where raised planter beds offered a peaceful pocket of greenery amid the hustle and bustle. It’s a beautiful detail that reflects the Magnolia brand’s commitment to intentional living and design. From there, we followed the line of food trucks, taking in the delicious smells and browsing everything from gourmet popcorn to southern-style lemonade.

Further into the property, we visited a cluster of restored historic buildings, a charming little league baseball field, and a handful of home goods and gift shops featuring Magnolia’s signature merchandise. Each corner of the development had something to offer, whether it was a piece of Waco’s history or a new addition to the district’s evolving landscape.

What stood out to me most during our visit wasn’t just the curated aesthetic or branded merchandise—it was the way the Magnolia development serves as a model for community revitalization. In the end, our Waco day trip was as much about the company as it was about the destination. Getting to spend quality time with family in a city that’s found its second life was a beautiful reminder that sometimes the most meaningful memories are made in the simplest ways.

Between brunch, coffee, and a walk through a revitalized downtown, Waco gave us a shared experience that blended past and present, tradition and transformation. And for a midway meetup between Austin and Dallas, I can’t imagine a better place.
